Using the latest winemaking techniques, the grapes were pressed under a vacuum, and fermentation was carefully controlled between 15º to 18ºC in stainless steel vats over a period of 10 to 15 days. The result is a complex and balanced wine, with 12.7% alcohol, a total acidity of 5.4g/l, and a pH of 3.32 with a volatile acidity of 0.35g/l.
